Baked Eggplant

Last night's dinner was this delicious dish - Baked Eggplant




Here is the recipe if you are interested in making it.


Ingredients:

* 1 medium eggplant
* flour, egg, Italian flavored bread crumbs (for the breading process)
* pasta sauce
*mozzarella cheese
*grated Parmesan cheese

Preheat oven to 350 degrees


Step 1:  First the breading process
After cutting the eggplant in thin slices dip the slices first in the flour, then the egg and finally the bread crumbs.

Step 2:  Cooking the eggplant
You can cook the breaded eggplant either by baking them on a baking sheet in the oven or you can fry them.  I've done them both ways and my family and I like them either way.

Step 3:  Assembling the Baked Eggplant 
First drizzle some pasta sauce on the bottom of a glass baking dish.  Then put a layer of the breaded eggplant.  Put a layer of pasta sauce on top of the eggplant slices.  Sprinkle with a layer of shredded mozzarella cheese. Then repeat with more eggplant slices, then pasta sauce, and shredded mozzarella cheese.  Repeat until you have used up all the eggplant slices. On the last layer sprinkle some Parmesan cheese on top.

Step 4:  Baking it
Bake in the oven for 30-35 minutes.

English Muffin Pizzas


Looking for a dinner suggestion?
Make some English Muffin pizzas.  I haven't made them in a long time.  They were quick and easy to make.  I made a cucumber salad to go along with the pizzas.

The toppings for the pizzas were mushrooms, olives, mini pepperoni slices and pizza cheese.

I discovered the mini pepperoni slices in Walmart last week and they were just the right size for the English Muffin pizzas.  My son doesn't like regular size pepperoni but he loved the mini pepperoni.  Hubby even added some to his cucumber salad.

I bake my English Muffin pizzas in a 400 degree oven for 15-20 minutes.

Tuna Fish Salad Sandwich

On Friday I made tuna fish salad sandwiches.  These are so yummy especially when it is made with sweet red tomatoes from the garden.  They are so good!




I make this sandwich with whole grain bread.  I like the hearty taste of this bread.  I also like to toast the bread.  Something about the crunchiness and the soft texture of the tuna appeals to me.  Other people might prefer their tuna salad on a roll.


I prefer to use the canned tuna in water instead of the oil.  That is how I had it growing up and I have always stayed with the same kind.  To the tuna I add a little mayo, a pinch of celery salt, and a pinch of onion powder.  Sometimes I add fresh chopped red onion, but I didn't have any on hand. 

I drain some dil pickle chips on a paper towel and set them aside.

I like to put the pickles right on the tuna salad.  

Then I add the lettuce and tomatoes.

Add your favorite chips (I like tortilla chips) to accompany your sandwich and you have yourself a nice light dinner.

Our Taco Salad

Taco Salad





This is a very simple meal to make.


Ingredients I Used:

tortilla chips
ground beef
taco seasoning packet
taco style shredded cheese
lettuce (chopped) 
tomato (chopped)
black olives (chopped)
green spanish olives (chopped)
sour cream

1) First I cook the ground beef, drain it, and then add the taco seasoning mix with 1/3 cup water.  I cook it for about ten minutes or until all the water is absorbed.

2)  While the ground beef is cooking I prepare all the other toppings.  I put everything in separate containers so it is easy to assemble the taco salad later. 

3)  To assemble the taco salad I put the tortilla chips on the plate first.  Then I add the seasoned beef.  Top that with the taco style shredded cheese.  Then I add the chopped lettuce, tomato, black olives and green olives.  Finally I add a spoon of sour cream on the top. 

This is a very simple dinner to make that my family enjoys.  There are many other toppings you can use to make this dish.
